Señor Tortas began its journey in 2009, when Victor and Amalia Castillo opened their first restaurant in Albuquerque, New Mexico. Initially, they focused exclusively on tortas, the traditional Mexican sandwich, which inspired their son, Victor Castillo Jr., to name the business "Señor Tortas." Their mission was simple yet impactful: to offer authentic Mexican flavors to the community at affordable prices, creating delicious, high-quality meals for everyone.

In 2014, Señor Tortas expanded with a stand at the Los Alamos Farmers Market, gaining popularity and eventually leading to the opening of a food truck at Shannon Properties on Central Ave. Señor Tortas continued to grow and soon became a fixture at community events, such as Friday night concerts in the summer. In August 2021, the restaurant found its home at the American Legion Post 90, and in January 2024 it moved to Smith's Marketplace, cementing itself as a beloved local institution in Los Alamos. They continue to offer the same irresistible flavors that made them a local favorite. From their iconic tortas to other Mexican dishes, the Castillos' passion for food remains at the heart of everything they do.
